DOLMA Turkish

.Even though the word Dolma is of Turkish origin, this dish is very popular in various countries, such as Greece, Egypt and Arab countries, but especially in Turkish cuisine. Precisely for this reason there are many variants, but basically it is vine leaf rolls with a delicious filling.

The dolmas are a true delight to the palate and also very healthy. Its elaboration may seem a bit complicated but in reality they are quite easy to prepare, and the result is worth it. Here we leave the recipe for you to give yourself a good taste!

Ingredients:

300 g minced beef

1 medium onion

3 garlic cloves

1 cup of rice

½ cup seedless raisins

½ tablespoon ground cinnamon

½ cup of pine nuts

1 tablespoon coriander and/or parsley

Olive oil

Salt and pepper to taste

30 vine leaves approximately

Preparation:

  1. First of all, you have to cook the rice beforehand and book.
  2. Meanwhile, rinse the vine leaves well under the tap. If they are fresh, it is necessary boil them for 10 minutes in enough salted water and then drain.
  3. In a large skillet, sauté the garlic and the chopped onion with a little olive oil.
  4. Add the meat and the rest of the ingredients except the rice, mix and cook for five minutes.
  5. Add the rice, mix everything, and remove from the heat.
  6. Lay out each vine leaf on a flat surface and place some filling in the center, fold each end in toward the center and roll forward to form the rolls.
  7. Place some raw grape leaves in the bottom of a pot and then carefully place them, trying to make them very tight.
  8. Then put another layer of leaves and a lid or plate on top to prevent them from moving, add enough water and cook for 45 minutes
  9. Remove from the water and let rest for ten minutes, you can serve with a drizzle of olive oil on top, or a rich Greek yogurt vinaigrette.
