2 cups of white rice

4 cups of boiling water or broth

½ cup chopped noodles or 1 cup boiled chickpeas

3 oil tablespoons

1 tablespoon chopped coriander

1 small onion chopped

2 crushed garlic cloves

Salt to taste

Raisins, almonds and/or pine nuts (optional)

  1. Before starting to prepare the pilav rice, make sure to boil the water or broth that you are going to use in the preparation.
  2. When the liquid to be used has boiled, sauté the noodles in the oil until they take on a tan color, taking care not to burn them.
  3. Then add the rice, which you must have washed well beforehand.
  4. Add the rest of the ingredients except the broth, stirring constantly for approximately two or three minutes.
  5. Next, add the boiling water or broth and cook over medium high heat, until the rice absorbs most of the liquid.
  6. Reduce the heat, replace the lid, and wait until the moisture is almost completely dry. If the rice is still hard by then, add a little more water and cook for a few more minutes.
  7. When the rice is the desired consistency, remove from the heat, replace the lid with a cloth, and let it rest for about 10 minutes before serving. When removing from the heat you can add a little margarine or butter if you wish.
